Mint truffle - This is Byron's favorite. He says he likes chocolate mints, but after tasting Erin's mints he told her "a hundred thousand thanks." The mint truffle is made with fresh cream and a smooth milk chocolate inside, surrounded by a deep rich dark chocolate outside. Byron loves it. Maybe you will too.

This raspberry truffle was inspired by Erin's friend Lori who had a bumper crop of berries in her yard. Lori asked Erin if she could use some raspberries. Thinking of chocolate all the time, Erin replaced the fresh cream in the truffles with fresh raspberry pulp. VOILA!!! A subtle raspberry flavor that gently washes over the tongue in a creamy ganache. Dip it in milk or dark or white chocolate.

We love our Monaco Coconuts. It has a simple coconut center with an almond on top, dipped in milk or dark chocolate. You can pick your favorite. We can make them without nuts for those who don't care for them, but at Erin Chocolates we ALWAYS "feel like a nut."

A day without orange juice... well Heidi thinks it's true. She is so crazy about these Mandarin orange slices dipped in dark chocolate that she brags about them all the time. Heidi thinks Erin should only make one thing. She is our inspiration for more and more ideas. So we keep trying new things and are very grateful for Heidi's input.

Erin started with this simple chocolate truffle. Most everyone loves this one as a standard staple. Is chocolate really a staple? Erin thinks so. This truffle has a smooth milk chocolate ganache center dipped in dark chocolate for a melt-in-your-mouth experience.

This tasty morsel has a dark ganache center dipped in white chocolate replete with toasted coconut. It has been a family favorite for a long time. Erin is glad she can make one that satisfies the pickiest of palettes. Renee and Byron especially like winter for the snowball fights they enjoy. Renee pushes Byron in the snow and throws snowballs at him. Erin thinks Byron lets her win the little battles 'til he has had enough and pummels her with his own snowy ammunition. That's why Renee's Favorite is called a snowball.

Now don't go calling this delicate treat CAR-mul. It's Cara-MEL. Erin accidentally said CAR-mul once and Deb almost bit her head off. She says it's the best tasting Cara-MEL she has ever had and it should be respected with its proper name. Erin thanks Deb for the education and won't make that FAUX PAS again. This caramel is made with farm fresh cream, butter, dark kayro syrup and sugar. It's gently cooked for an hour with plenty of stirring and a lot of "happy thoughts." Whoever walks through the kitchen is instantly recruited to take their turn at stirring. Remember the Little Red Hen?

If what you need is a vacation and you don't have time... If you've had a hard day... Or maybe you just need a hug. Erin wishes she could be there to hug you personally. In the meantime you may want to try Chocolate therapy. This has a rich deep dark chocolate outside and ganache center with a bit more firmness than the others. Its consistency is perfect for a "bite" followed by a wash of serenity seeping into your soul. It only takes one of these to let you know that Erin has been with you in spirit.

Not everyone can appreciate a good mocha. Erin is sympathetic and doesn't try to force her creations. Certain coffee chains have made a lot of people happy with cups full of steamy hot drinks. When Michelle first bit into a Mocha truffle her face lit up like a Christmas tree. She said it tasted "just like" the mocha drink that she buys regularly. This truffle is just like the Chocolate therapy with rich freeze dried coffee and a cappuccino flavor added. The deep rich dark flavor will sweep you to another world. Well, that is Erin's hope for you.

Whether you call them turtles, pixies, tads or scallies, you are sure to love our delectable caramel poured over fresh roasted nuts and dipped in superior chocolate. Choose milk or dark and pick your nut. Erin enjoys variety just like the next guy. The most popular turtle is the milk-pecan. But we have die-hard cashew and almond lovers. Bruce likes the Macadamia turtle more than life itself. (That's a lot.) Erin agrees that he has a very educated palette.

Sometimes you don't feel like a nut... Or you may be allergic. (Erin's condolences) You can choose chunks of delicious caramels dipped in milk or dark chocolate. It's a perfect pick me up in the middle of the day, or at the end. It's big enough for two bites, perfect for savoring. Except for Uncle Bob, he pops it all at once.
